leaving 非谓语动词的现在分词表主动,作后置定语,修饰 person;也可以理解为定从的省略,完整句为:The person who is leaving “MasterChef” is Lizzie.

face off = compete,源于冰球比赛开球的时候两队球员面对面。简单翻译:对决。本期主题!

a restaurant-quality barbecue plate 餐厅级别的烧烤拼盘。从小就夸妈妈做饭达到可以拿到饭店卖的我,终于学会了这个英文表达呀!Mom’s dishes are restaurant-quality.也可以用来夸大厨朋友。 ZR’s cooking is restaurant-quality.plate 拼盘,就是不能单单是烤东西,而是得有一些主要烤肉、配菜、酱料的搭配、组合等。

elimination,淘汰。be safe from 免于。。本期精彩片段的提前播放:

make it past auditions, 通过海选。谦虚表达,虚拟语气。我以为我不会做到,但是实际上做到了。

这句话是我选择分析这期节目的原因。这句评语写得太好了:You played the grill like piano. 你玩烤架就像弹钢琴一样。

Oh, no。一个危险词:amateurish,[ˈæmətərɪʃ],外行的。正片开启

如果哪一天,或者就讲某个节日是你很喜欢的一天,就可以这样说:This/节日英文 is one of my favorite days.Come on, it’s grilling time! 烧烤时间到!名词+time,xx时间。exercise time 运动时间,study time,party time。类似的,换个动名词可以讲:It’s reading/shopping/cooking/sleeping time.

为什么 Grant 看到 烤炉 两眼放光呢?因为:It’s one of his favorite things to do during those lowa(他老家) summers. 夏天正是吃烧烤的好时节啊。I couldn’t be more at home. 不能更自如了!(用比较级表最高级)练习:3)我不能更开心了!   4)我完全同意!

come off,也有 做成 的意思。…and show off to them today,(要炫技了),show them that I do know what to do in front of this grill. (do 表强调)。这一环节有点像赛前放狠话阶段。有的时候选手会一个大翻车,栽在自己擅长的菜品上。也可能是因为评委们知道选手擅长,从而对选手的菜有了更高的 bar (参照线,标准)。打招呼阶段:一个女孩说自己是 camper girl,Gordon 说:So you’re at home, right? at home 再次出现,= very comfortable。

immunity pin,赦免([ɪˈmjuːnəti])胸针,这一季前几期的特殊设置。上期节目表现好的人得到一枚 immunity pin,使他在下一期节目不用比拼直接晋级,且有一项优势(advantage)。

打广告了:你们可以使用这些 state-of-the-art(adj.去我的知识星球搜呀) Viking 牌烤炉。

她当然不会去选一个 她认为是 top dog 的人啦。夸人词 +2:top dog 老大,头头,最重要的人,掌权者,地位最高的人outstanding 非凡的… isn’t the smart thing to do,主语从句可以这样用,…用一个句子,来表达「干什么不是个明智的事情」。

因为这是 top dog 们可能会出错的机会。slip up = make a mistake,注意 slip 的过去式要双写:slipped。

one shot  一次(难得的)机会。

knock out  淘汰。夸人的好词:incredible。Gordon 说,this is a massive decision(重大的决定)。因为接近决赛了,再也没有 immunity pin 了。

finale [fɪˈnɑːli] 这个单词听起来,比起 费,更像 for,倒 e 的 短 e 音。介于二者之间吧。approach v.靠近,接近。熟词僻义哦。free passes 免费通行证/轻松过关。

We want to see what you’re all made of.我们想看看你们的能耐!What you’re made of 习语,表示真正的 integrity、character,真实的 courage、resilience 等内在品质,在压力或挑战下展现的真正实力。类似:show your true colors,show what you’re capable of, prove your worth, show your mettle.中文,我的理解:是骡子是马,拉出来溜溜。选了一个实力不上不下的人。Take a seat. 去坐吧。

注意哦,What a lovely surprise. 有冠词的。

whoever… sadly, whoever… for good = forever常见的搭配:leave for good,永远离开;quit for good 彻底戒掉;close for good 永久关闭;gone for good 一去不返。开始做饭拿食材

左下妹子:Knowing I have to make a masterchef-level dish on the grill today is making me feel a mix of emotionsOn the one hand, I’m excited. I grew up with my dad grilling every week. But in terms of actually doing the grilling myself, I’m definitely not as experienced as him.考试考到 mix 词转基本都是 mixture,所以 a mix of 和 a mixture of 是有细微差别的。a mix of,强调混合后的,情感交织;a mixture of 是混合后各个物质还是各个物质,书面正式一些。I grew up with … doing sth. 这个句型可以学习一下,表达童年经历。我从小老是和谁一起做什么事情。I grew up picking up litter with my grandma in the park after school.你看,every week,也没有说一定得用一般现在时。逻辑词:有条理地展开,on the one hand(一方面)…,but in terms of (但是说到,转另一个方面)…我的造句:On the one hand, I love drawing. But in terms of using colors, I am not as skilled as my teacher.不如:not as + adj + as,和 I’m not experienced 相比更加委婉。她决定 give it all,全力以赴。

that good,相当不错的,如传闻般优秀的。所以她要做的是 gulf coast flavor。grab (抓)一些纽约牛排、生蚝、蟹肉。

蟹肉等级分类:Jumbo Lump – 最大块,最优质Lump – 大块蟹肉Backfi – 中等大小的肉块Claw meat – 蟹钳肉,通常带一点棕色Flake meat – 小碎片蟹肉

stunning,美爆了的,表示棒的形容词 + 1.选手做饭紧张的环节,就是三位评委悠哉悠哉地聊料理要点(带着审题了)。

连接词:first and foremost important。rub,按摩?嗯,给肉来个充满爱意的按摩?hh我瞎说的。官方一点的词:揉搓揉搓。marinade [ˌmærɪˈneɪd] n & v,这个词在这季综艺里反复看到,已经可以熟记了。用汁来腌肉的过程。

big, bold flavors 指 重口味的、浓郁的调味;bold 大胆的,突出的。重盐,重香料,分量要够。因为烧烤会失去细腻的味道。flavor profiles 整体的味道特征,风味的层次感。be muted,不出味

MasterChef 里时间的倒计时,几乎每一集都有。省略句,完整表达是:10 minutes have gone.

bonding time,建立亲密关系的时间,培养情感的时间。秀回忆照了,按套路的话,后面菜不会太丑陋。

not much of a chef in the kitchen,不太称得上是厨房里的大厨,但是在外面,烧烤,他就是行家。口语 he is the man,他就是那个人,很棒。

So I’m ready to show what I learned.很适合用来表达对某人的感谢。

a surf and turfsurf 海浪🌊 表示海鲜,turf 草皮,表示陆地/牛肉。这期节目很多人做这个类型,当时看的时候是隐约猜到的意思。一些经典搭配:lobster + steak,shrimp + steak,scallops 扇贝 + steak,crab + steak。

前面提到的句型复现!…grew up doing sth。这里是说自己用不来 fancy grill。(not good with buttons,not comfortable,don’t know how to control the heat)

让我看看我能不能……宾从的例句:Let’s see if I can melt this a little bit. 做饭时的碎碎念。

rest,我这个山西人之前知道 rest 是让面醒一会,刚和好的面团扣起来放一下,然后再随便揉一下,表面就会变得很光滑。但是 蛋白质为什么要 rest 呢?理解是 腌的时候静置,烤完之后也晾一会再动。

chipotle-rubbed, chipotle [tʃɪˈpoʊtle] ,一款墨西哥辣椒。他回应其他选手的关心,该烤了,说 It’s thin. It’s gonna cook super fast. (肉薄 熟得快,没事) 。但是还是经典的回应建议:thank you 来了。

回应感谢:No problem。主持人讲:

Has been a real high point(现完)for me.

high point,高光时刻,最期待的时刻。类似:highlight,peak moment,best part。

呐,谁说 feel 没有现在进行时了。语法不能死记硬背哦。

因为家里一直是老公在做 grilling,所以她讲自己还是新手。be new at sth,你看 be good at 相对应的也可以不是 be poor at。be bad at 听起来很负面。那么 be new at 是一种谦虚的讲法,说自己只是缺乏经验而已。实际上这个选手实力很强,烹饪的技能是可以迁移的嘛。光是耳濡目染都可以做得很漂亮了。

get through another challenge这位选手很不错,面对挑战会 get more excited 或 more determined。You are going to love my rub here.So, I have a memphis rub that has some herbsAnd also has some spice to it as well.– Right, so it’s a dry rub.– Yes, it is a dry rub.– And you’ve got a double-cut pork.– Yes.double-cut pork,双倍厚度切的猪扒。dry rub,干的香料(药草和调料)。spices 的例子:盐、黑胡椒、辣椒粉、孜然;herbs 的例子:迷迭香、百里香等。

确实厚啊。建议时刻:

baste,浸润,用汤汁、油脂反复淋在食物上(烧鸡腿的时候不停地舀起卤汁,把它往没有浸润的肉上淋);brush it,刷油、酱汁;sear it,高温加热食物后,让表面形成焦糖化的烤痕、烙印。选手很多都用上了 blender(搅拌机)。

这位选手非常生猛的,没有 barbecue,只有 campfires。她这次准备的菜是:coffee-rubbed elk tenderloin。tenderloin /ˈtendərˈlɔɪn/‌‌ 里脊。elk,麋鹿。

puree 这种带了小撇的单词,一看就知道,这是菜泥。和 marinade 一样是一个见多了知道意思的词。

她的用料很大胆,很有个人特色。“I just like standing out, and being unique in my flavors, I don’t want to do what everyone else is doing.”烤 oysters 的妹子决定让它们自己在 grill 上 pop(开口)。主持人请选手介绍菜时:Give us an insight to the dish.这位选手也很会吊胃口,说,这是传自我意大利奶奶的手法。我还会做点提升(elevate),带点 sweetness。

Gordon 说:喔,authentic(很正宗呢)。聊了几句,又调侃他,

过去两周表现垫底了呀。

too big for one’s britches, britches 是 US 口语的牛仔裤。意思是,太过自我膨胀。牛仔裤都穿不下了。

pull off = manage to do,做到/搞定难得事情。

I thought I could … 使用了虚拟语气:我以为我可以的。This is going back to my roots. 正就是我老家做的事情。我觉得如果我在大家面前露一手和面,也可以说这句话。因为哪个山西人不会和面呢?

喔,难得的暖心安慰啊,Gordon。… you beat yourself up too much. 你对自己太过苛刻啦。下次朋友因为对自己要求高而难过的时候,你可以用这句话来安慰他。That’s gone. 过去的就过去啦。 三个评委又搁这分析起来了。

one of the most tempestuous proteins,是最让人紧张的蛋白质了。他们在评价鹿肉。因为 No fat,needs constant nurturing,不能烤得超过 2、3 分钟,不然就会 overcook it。会变得 jerky(有嚼劲;n牛肉干)。tempestuous   [temˈpestʃuəs] 狂暴的、变化无常的、难以预测的。在这里可以理解为,最难驾驭的一款肉。constant nurturing,[ˈnɜːtʃərɪŋ] 持续的照料,在这里是得一直看着炉子的持续关注,监控火候、温度。v:nurture [ˈnɜːtʃə(r)] 养育。

二轮巡场:

还记得前面介绍过的海陆双拼吗?哪个是海?哪个是陆?这妹子说 surf 是牛排。G 说 Have you been drinking? 你喝酒了吗?hh所以可以用于你觉得别人脑袋昏昏的时候。

紧张感渲染:And top eight looming. How are you feeling?loom v 若隐若现;威胁性地逼近。有种山雨欲来的压迫感,决战 8 强呢,你感觉如何?I mean, I didn’t think I’d make it past auditions.– Really?– Yes, chef.It’s some incredibly talented people here, you know?And it’s hard to see myself standing up against everybody here.

暖心鼓励又来了:You deserve to be here,孩子。

You‘ve got every chance to get yourself to that top eight. 完全有机会进前八。

Focus, edit yourself, and taste everything before you put it on a plate.这真的好像给学生们的考前寄语:好好做题,思考清楚,检查誊写无误。

Chipotle rub,墨西哥风味辣椒。

Don’t move it till you are ready.    好之前别动它。 timing 时机。看看这个焦痕,真不错。Joe 听完介绍后觉得是一个 interesting strategy,问 阿伦你怎么看?(wouldn’t you say,aaron?)阿伦表示同意:我们有 citrus,[ˈsɪtrəs] 柑橘类。

And also sort of aggressive cooking styles, which the grill allows you to do. And the fact that you’re stepping out of your comfort zone and going “mexicana,” I really appreciate that, and I think that’s what it’s all about.阿伦大大表扬了选手(Wayne)的思路。有进攻性的烹饪风格。

但是 Joe 说,虾别 overcook 了。这位选手背后的信念:

When I was a kid, my mom would cook my lunches wrapped in banana leaves.

And send me off to school with it.

So I just miss that flavor, that aroma in food.包在香蕉叶里,很有画面感。aroma,香气。其实这里我也有些不理解,为什么 Joe 这么在意虾不能过熟。老家的虾基本都是炸熟之后,再炒成香辣虾的。可能是 Joe 所秉持的标准吧。

最后阶段,评委们会猜测一番,判断一下谁的技术含量高一点,谁的创意十足等等。Joe 认为妹子把 oysters 放在 grill 上烤开,是把 grill 当 oven 了。阿伦附和,faux grills,假烤。Gordon 说这是一种 technique。他们对 Md 的 dish 很是关心。G 说 appreciate the cultural spin with the banana leaves。cultural spin,文化表达。spin v.旋转。

正式开始评价前的自我感觉,大部分还不错,but:

哦 no,鹿肉烤过了。I definitely messed up. mess up,搞砸。正式尝菜Since there are only seven of you cooking,

Joe, aarón, and I are gonna taste all of your dishes today.

since 表原因,既然只有 7 个人,那就都尝尝。

前面看图如果有点分不清谁做了什么的话,下面尝菜环节我保证你不会错过精彩部分。

顺序为三位评委商量的想吃的顺序:

第一位:Grant

in a row,连续。对应前面说的最近两周表现不佳。take,感受一下 take 的含义。

I made double-cut pork chops(主菜:厚切猪排)

with a spicy tomato sauce,(配菜1:香辣番茄酱)

With balsamic glaze(浓缩香醋), charred(表面微焦的) broccolini(配菜2:比 broccoli 更嫩的小🥦) 

over an herb polenta. 

polenta [pəˈlentə] 玉米糊(意式玉米粉制成的糊式美食)。herb 香草。阿伦看到了他的决心,说意大利式的烧烤?!通常我们讲意大利菜,不会想到烧烤。So the fact that you were hell-bent on doing that. hell-bent , hell 地狱,bent 弯曲的,形容即使面临地狱般危险/困难,也要做到某事。

我也希望我的作品 says a lot about me。

有肉必切开看熟度。开之前会问,你的预判是什么?体现了高级厨师对肉熟的程度的精准把控。

听到最多的版本。预判不符还嘴硬就彻底没救了。前面的某位选手,在准备阶段跟评委说了要做的是什么,到最后没做到又改口了。引起了 Gordon 的痛骂。一点也不磊落。

G:Pork’s cooked beautifully. I mean, it’s just absolutely nailed, and that’s really hard, that. I can taste how desperate you are to win this competition in this dish. 觉得不好的地方:Just edit yourself. I think this dish could do without the polenta, ’cause you’ve got such protein within that sauce and the blister([ˈblɪstə(r)]泡) in the tomatoes, and so that was the liquid. That’s all it needed.A: I disagree. I love the polenta. I love the seasoning on the outside of the pork. Everything’s spot-onspot-on,英式英语,恰到好处,相当到位!J: This is an in-your-face, full-flavored dish. The pork chop is cooked very well. It’s quite, quite good.能让挑剔的 Joe 连用两个 quite 是很优秀了。第二位:Kennedy她慌张极了。

I made a coffee-rubbed elk tenderloin(主菜:咖啡粉腌制麋鹿里脊肉)

With a mushroom medley and a carrot purée.(配菜:蘑菇拼盘和胡萝卜泥)medley  /ˈmedli/ 混合,拼盘  purée   /pjʊˈreɪ/ 菜泥肉的问题果然没逃过评委的眼睛:

学到了,灰色的鹿肉是不行的。

G: Yeah, here’s the thing. We’ve come to admire you, and you’ve been such an outstanding, consistent individual. I think it’s one of your most lackluster dishes in the competition, because it’s lost the excitement of the grill. It’s just sort of all aestheticbut it doesn’t work comprehensively.lackluster adj.缺少亮点,平淡无奇。luster 光泽,发光。讲的挺重的。一直以来表现都很稳定的:consistent。但是只是,aesthetic整体没有很协调(work comprehensively)。

A: For me, that sauce completely got lostI can’t even pick up any of those flavors there, and that’s disappointing.

酱料迷失了。

J: Yeah, so, the overcooking of the elk really kinda makes it tasteless to me. It kind of ruins the dish. It’s unfortunate, because some components are good, it’s just the main principal protagonist is miscooked for me, and that’s a problem.protagonist   /prəˈtæɡənɪst/ n.主人公,在这里是说菜的主要部分miscooked   adj.饭烧砸了的,或者理解为 be done 被动,被烧坏了。第三位:Md

I’ve made steamed red snapper(主菜:蒸红鲷鱼)

miss the mark,未达到目标/期望,源于 mark 指是射箭、射击的靶心或目标。像是答偏题了一样。虚拟语气:I suppose if you just grilled the fish, it’d be way better. 如果你只是烤了鱼,会更好。

to one’s point, 如 xxx 的观点。A 还是夸了一下,喜欢 palapa/pəˈlɑːpə/ shrim(香辣椰香风味)。 而 Md 会觉得这样不能更好地体现她老家的风味。她就是想呈现香蕉叶包着的感觉。

I think we were very, very vocal about saying restaurant elevated, no? I made a chipotle dry-rubbed New York strip steak. (主菜:墨西哥烟熏辣椒粉干擦纽约客牛排)And then I’ve got two citrus-marinated jumbo prawns(配菜1:两只柑橘腌制大明虾,jumbo 表示大的) sitting on a bed of spicy mexican rice,(配菜2:墨西哥辣味米饭上) and I’ve got a salsa verde cruda.(配菜3:意式绿色生酱)a bed of,菜品的打底部分,铺在底层的主食或配菜,像床一样。盖浇饭的饭:a bed of rice。BTW,盖浇饭的菜:toppings。吃之前,J:

For this dish to be a top-level dish, the seasoning, the cook has to be on point, because you have nowhere to hide here.be on point,在线。have nowhere to hide,无处可藏。

确信肉没烤过后,Wayne 的嘴角上扬了。更自信了呀。

J: Wayne, you really had a lot of confidence in your technique on the grill to do this dish, and have to say, you nailed it. It is perfect grilled simplicity. Good job.nail it,超赞!干得漂亮!比 well done 的语气更强。A: What I’m most impressed with is the fact that the marinades, you had a chance to bloom them and blossom the flavor on the grill. And right there, that for me is the most magical part of this dish.阿伦说他最深刻的是腌制的风味在烤炉上开花了。很神奇。have a chance,在这不是说有机会了,而是说真的做到了。bloom  /bluːm/  v.开花,在这里表示 释放香味;blossom /ˈblɑːsəm/ v.& n. 花朵;盛开,发展,在此处表示风味的充分展现。 G:Wayne, I think you played the grill like a piano.’cause you’ve got everything done correctly. Today’s challenge was a grilling challenge, and so every element on this plate has been elevated from the grill. That was the objective. I am just praying that it is cooked perfectly.

pray, 祈祷。下图右边可以看出来,有三个小点。这位选手的摆盘一贯很优秀。(elegant)

I’ve made a grilled double bone-in pork chop(主菜:烤双层带骨猪排)

with a Memphis rub, an Alabama white barbecue sauce,(配菜1:xx酱,xx白烤肉酱)

a grilled sweet potato purée,(配菜2:烤红薯泥)

and grilled baby gems and mushrooms.(配菜3:烤宝石小生菜和蘑菇)又来了:

啊哦,一点点干。a touch 又见到了。

A: Jennifer, I think the magic, really, in this dish is the exterior of the pork. It’s well seasoned(肉的外层)It just has a depth of flavor that’s so cool and spot-on. well seasoned,腌得很好。这里的 cool 可不表示「凉爽」啊,就是「好」的意思;a depth of flavor,味道层次丰富;spot-on,到位,类似 on point,perfect。G: I love what you’ve done with the sauce and the lettuce, and that Alabama white barbecue sauce. The thing that lets this dish down is just that purée. I made a Texas-style surf and turf with a filet and barbecue shrimp.(主菜:菲力牛排和烤虾)I also made corn ribs (配菜1:玉米排骨,切条后形似排骨的玉米)and a sweet potato casserole(配菜2:红薯砂锅菜) with a brown sugar and walnut topping.(砂锅上浇了红糖胡桃碎)

嗯~ 摆盘也不错捏~ 果然得到了好评:Talk about the presentation. This is like, boom! Very Texas. Big, explosive, lots of colors.摆盘也可以用  presentation (呈现)。

A: All right, Kolby, so, what I love about this dish is I’m thinking about Texas, like, an elevated steakhouse. You know? 上菜前自信满满。

I made an Alabama surf and turf, which is a whiskey steak with crab and mushrooms. And brown butter in Pontchartrain sauce.(主菜:威士忌牛排配蟹肉蘑菇,淋上加入了褐化黄油的庞恰特雷恩酱汁(新奥尔良经典海鲜酱,通常有奶油、白酒、香草))Wilted spinach and chargrilled oysters.(配菜:嫩炒菠菜,炭烤牡蛎)wilt   /wɪlt/ 原本是「使枯萎」,在这里是说把菜炒到软嫩,让绿叶菜在锅里变枯萎!chargrill  /ˈtʃɑːr.ɡrɪl/  炭烤。合成词:charcoal 木炭。炭烤会有炭烤的焦香。类似:flame-grilled 明火烤;wood-fired 柴火烤。不妙,阿伦看到摆盘后,说,I don’t know about you, but I’ve never seen barbecued oysters on a composed dish. And the butter on the crab looks a little bit overbrowned.

Joe: Quite frankly, that crab is probably better off raw than what you did with it.  蟹肉还不如生着呢。(大概这个蟹肉烤过的过于明显了。)

G: Dear. So, the crab’s burnt, as you can see. It’s just all dry. You have to stop the butter from overcooking, otherwise it’s just bitter.Steak, slightly under. Seasoning is on point.
